Entries for the 2018 Eggland’s Best “America’s Best Recipe” Contest will be accepted between now and through April 30th, 2018. Peaches and Cream Cake
This Peaches and Cream Cake is one of my family’s all-time favorites! Best of all, it is effortlessly easy to create with everyday staple ingredients like Eggland’s Best Organic eggs. It is moist with the perfect amount of sweetness. For the cream cheese, I use the vegan cream cheese by Follow Your Heart. This dairy-free alternative is the perfect option for those who are sensitive or allergic to milk-based products. As for instant vanilla pudding, Simply Delish’s version is my favorite! The cake is just as enjoyable solo as it is with a dollop of whipped cream, drizzled with peach syrup, or paired with vanilla ice cream.
Ingredients
- 1 box of instant vanilla pudding
- 1/3 cup of melted coconut oil
- 4 Eggland’s Best Organic Eggs
- 1 cup of sugar
- 1 large can peaches, drained and save the juice (I prefer sliced peaches)
- 1 box of yellow cake mix
- 1 cup of water
- 8 oz. cream cheese
Instructions
- Combine cake mix, pudding, coconut oil, cream cheese, sugar, 6 tablespoons of peach juice (optional), water, and eggs. Pour mixture into a greased 13 x 9 inch baking pan. Bake at 350 degrees for 50 - 60 minutes or until the fork test comes out clean. It is also just as enjoyable solo as it is with a dollop of whipped cream, drizzled with peach syrup, or paired with vanilla ice cream.
