Little Chocolate Pots

Makes 6 little pots
6 ounces dark chocolate
1/2 cup strong black coffee
1 tbsp unsalted butter, at room temp.
3 eggs, separated
2 tbsp dark rum or 3 to 4 drops vanilla extract

Break the chocolate into pieces and put it into a saucepan with the coffee. Place over low heat and melt slowly to a thick cream, stirring occasionally. Remove from the heat and beat in the butter, then beat in the egg yolks one at a time. Add the rum.

In a large bowl, whisk the egg whites to stiff peaks and stir into the chocolate mixture using a metal spoon. Pour into the small pots or pretty glasses, cover, and chill overnight before serving.
